When throwing a house party, great food is key. But appetizers can be hit or miss. Make sure your guests are well-fed with this great potato appetizer recipe! Perfect for the cold winter weather, these nacho potato skins are sure not to disappoint at your winter house party. Here’s what you’ll need to get started.
Ingredients:
6 potatoes
3 tablespoons olive oil, plus extra for drizzling
6 strips of bacon
1 teaspoon garlic powder
1 teaspoon red pepper flakes
1 cup refried beans
1 1/2 cups shredded cheddar cheese
1 cup guacamole
1 cup salsa
Start by preparing your potatoes. Make sure they’re clean and have some ventilation (easily accomplish this by sticking them with a fork). Pre-heat the oven to 400 degrees F. Drizzle the olive oil over the potatoes and bake them for about an hour.
Prepare the bacon by frying it until crispy and then chopping into pieces. Once the potatoes are done, wait for them to cool. Once cool, cut them in halves and scoop out most of the centers.
Reset the oven to 450 degrees F. While the oven is heating, season the potatoes with the pepper and garlic, flesh side up. Stick them back in the oven for 10 minutes. Flip them, and put them in for another 10 minutes.
Take them out and fill the hollowed side with refried beans, bacon and cheese. Put them back in the oven to let the cheese melt.
Garnish them with salsa, guacamole, or your favorite potato toppings and enjoy!
